Banana Bread

6oz self raising flour
6 oz sugar brown or white
1 1/2 oz butter
1lb bananas
2 eggs
6oz raisins
1/4 tsp baking soda (bicarbonate of soda)

Beat butter and sugar together until light and fluffy. Add eggs one at a time, beating in between. Mash the bananas and add to the mixture with the raisins
Combine flour and baking soda and fold into the mixture.
Pour into a greased and lined 2lb loaf tin and bake at gas mark 4 for 1 hour (or until a knife comes out clean) - you may need to cover the top to stop it burning.
Turn out onto a cooling rack.

Again, too much time has passed since I last posted and, again, I am full of good intentions to be better this time.

Busy, busy time chez nous.  When is it not?  But with exam successes behind us and a bizarre set of circumstances leading to us holidaying without Peter, we are about to embark on another autumn and winter - never my favourite time of year.

Still onwards and upwards and I am definitely going to write and learn to use this blog. 

Yesterday I made banana bread - recipe in the relevant section.  Chris at work (who always has to have a piece) says it is the best yet.  i will include a photo next time I make one.

The great freezer empty continues - it is the same one that was in the previous post but this time I am going to do it.  So tonights tea was yellow stickered (reduced) chicken breasts with onions, mushrooms and spinach (the latter was from the freezer) and a jar of left over curry sauce lurking in the fridge.  I defrosted some left over pilau rice and Peter cooked it with peas and corn and then turned it into egg - fried for Vicky.  Yummy.
