Banana Bread

6oz self raising flour
6 oz sugar brown or white
1 1/2 oz butter
1lb bananas
2 eggs
6oz raisins
1/4 tsp baking soda (bicarbonate of soda)

Beat butter and sugar together until light and fluffy. Add eggs one at a time, beating in between. Mash the bananas and add to the mixture with the raisins
Combine flour and baking soda and fold into the mixture.
Pour into a greased and lined 2lb loaf tin and bake at gas mark 4 for 1 hour (or until a knife comes out clean) - you may need to cover the top to stop it burning.
Turn out onto a cooling rack.

Again, too much time has passed since I last posted and, again, I am full of good intentions to be better this time.

Busy, busy time chez nous.  When is it not?  But with exam successes behind us and a bizarre set of circumstances leading to us holidaying without Peter, we are about to embark on another autumn and winter - never my favourite time of year.

Still onwards and upwards and I am definitely going to write and learn to use this blog. 

Yesterday I made banana bread - recipe in the relevant section.  Chris at work (who always has to have a piece) says it is the best yet.  i will include a photo next time I make one.

The great freezer empty continues - it is the same one that was in the previous post but this time I am going to do it.  So tonights tea was yellow stickered (reduced) chicken breasts with onions, mushrooms and spinach (the latter was from the freezer) and a jar of left over curry sauce lurking in the fridge.  I defrosted some left over pilau rice and Peter cooked it with peas and corn and then turned it into egg - fried for Vicky.  Yummy.

New Year, New Resolution

Hmm, the first post was ok - but where was the rest? 

Update - I did the run - in a little over 3 hours.  I was quite pleased with that, as I had expected to do it in at least 4.  The burning question of the moment is "should I do it again?"  The training will do me good as, although I walk alot to work, I don't do much else.  Vicky and I have just started zumba!  I am not sure but VIcky is quite keen so I will continue in order to support her.

My next resolution is to learn how to make this blog more interesting and useful.  I am hoping the purchase of my new Samsung Galaxy SII will help.  It is my birthday present and was going to be an iphone, but I simply can't justify the expense of the i phone and no-one else seems to be able to either, even those who have them.  It just seems like it is something to "have", and I am just not into that.  But a better phone will be useful for both work and pleasure, so tomorrow i am off to Tesco to get it - as they seem to be doing the best deals at the moment.

Many of my christmas pressies comprised gardening and cookery books so that forms another resolution.  I have dabbled a little in the garden (my runner beans have been a triumph, darling) but would like it to do more.  I can then use said produce in my cooking if i ever get the freezer contents down.  We are currently "eating out of the freezer" but the volume doesn't seem to diminish.  It may be because of my addiction to Yellow Stickered "whoopsies" - i.e. foods that have been reduced to a fraction of their original price.  My freezer currently holds 4 blocks of stilton, reduced to 19p!  That will take some time to get rid of.

My final (ish) resolution is to do less browsing and more writing.  I am going to update the blog regularly and continue with the writing course, only for pleasure but I would very much like to improve my skills.

So - watch this space.  Things can only get better.
